Lamb And Green Pea Bredie

Ingredients

100 ml (4fl oz) vegetable oil
1 kg (2 ¼ lb) lamb shank, cut into steaks across the bone
3 onions, finely chopped
1 teaspoon star anise
1 tablespoon red masala curry paste
5 green chillies, chopped
5 garlic cloves, roughly chopped
3 sprigs of fresh thyme
1 litre (1 ¾ pints) lamb or chicken stock
450 g (1 lb) potatoes, cut into large dice (or small new potatoes)
450 g (1 lb) fresh or frozen peas
Salt and freshly ground black pepper

Method

1. Heat the oil in a pan and brown the lamb. Add the onions and cook for a few minutes, then put in the star anise, red masala, chilli, garlic and thyme. Pour on the stock, cover and cook for about 20 minutes.


2. Add the potatoes and cook for 15-20 minutes until tender. Add the peas and cook for 5-10 minutes. Season to taste and serve with plain boiled rice and Green Apple Sambal (see below).


Green Apple Sambal

Juice of 2 lemons
4 hard green apples, peeled
2 garlic cloves, crushed
2 green chillies, finely chopped
A little sugar if necessary

1. Put the lemon juice into a bowl and grate in the apple, tossing from time to time.

2. Add all the remaining ingredients, adding a little sugar if you like. Mix together well.
