African Vegetarian Stew
Ingredients
4 small Kohlrabis, peeled and cut into chunks (Parsnips may be substituted for the kohlrabi)
1 large onion, chopped
2 sweet potatoes, peeled and cut into chunks
2 zucchini, sliced thick
5 fresh tomatoes (or 16 oz can)
1 can garbanzo beans and liquid (15 oz can)
½ cup couscous
¼ cup raisins
1 teaspoon coriander, ground
½ teaspoon turmeric, ground
½ teaspoon cinnamon, ground
½ teaspoon ginger, ground
5 tablespoons cumin, ground
3 cups water
Method
Combine all the ingredients in a large saucepan. Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes. Serve the couscous separately, if desired.
