Hot Bean Salad With Garlic Sausage
Ingredients
2 X 16-oz cans cannellini, pinto or other white beans, drained and rinsed
½ cup chopped scallions
1-2 garlic cloves, peeled and minced
6 tablespoons olive oil
2-3 tablespoons red wine vinegar
2 tablespoons chopped fresh parsley
1 large ripe flavorsome tomato, chopped
½ sweet red pepper, cored, seeded and diced salt and black pepper
Tabasco or other hot pepper sauce dried hot red pepper flakes
½ lb garlic sausage, sliced or cut into chunks
Method
Combine the beans, scallions, garlic, oil, vinegar, parsley, tomato, sweet pepper, and salt, pepper, Tabasco and pepper flakes to taste in a saucepan. Heat for 5-10 minutes, stirring occasionally.
Meanwhile, fry the sausage in a heavy skillet until golden brown. Drain the sausage on paper towels and mix into the hot bean salad.
Serve hot.
