Granola Buns
Ingredients
2 cups (500 ml/250 g) coarsely ground whole wheat flour
½ tsp (2 ml) salt
Grated zest of ½ lemon
2 (¼ oz/7 g/2¼ tsp) envelopes active dry yeast
⅔ cup (150 ml) lukewarm milk
1 egg
1 cup (250 ml/100 g) unsweetened granola or muesli with raisins and nuts
Old-fashioned rolled oats
Milk for glazing

Method
Sift the flour into a large bowl. Stir in salt and lemon zest. Stir the yeast into the milk until smooth and let stand until frothy, about 10 minutes. Stir the egg and the yeast mixture into the flour. Knead until smooth and elastic. Cover and leave to rise in a warm place for 30 minutes.
Knead the dough again, stretching it a little; sprinkle with granola and work in. Divide the dough into 8 pieces and shape into rolls. Sprinkle a fine layer of rolled oats on the work surface and roll the balls of dough over it, gently pressing in the oats.
Preheat the oven to 325°F (160°C). Arrange the buns on a baking sheet lined with parchment paper. Brush with milk and leave to stand, covered, for 20 minutes. Bake for 30 to 35 minutes.
TIP:- The buns can be frozen and baked as needed. Thaw, then bake in a preheated 325°F (160°C) oven.
