Asian Chicken Salad

With the great flavours of the Orient - papaya, coriander, mint, chilli and lime - this is a simple salad to make, but full of flavour. Perfect for a light lunch or as an appetiser.

Ingredients

450g (1lb) shredded cooked chicken
1 carrot, cut into julienne
½ green paw-paw or papaya, peeled and cut into julienne
3 tablespoons chopped mint
3 tablespoons chopped coriander leaves
1 bunch spring onions, sliced
½ celeriac, cut into julienne
25g (1oz) unsalted peanuts, roughly chopped
Freshly ground black pepper

For the dressing

2 teaspoons finely chopped garlic
1 tablespoon finely chopped chilli
150ml (5fl oz) lime juice
2 tablespoons nam pla (Thai fish sauce) or reduced-salt light soy sauce
1 tablespoon liquid honey

Details

Serves: 4


Method

To make the dressing, combine the ingredients in a bowl.

In another large bowl, mix the remaining ingredients with enough of the dressing to coat and season well with black pepper to taste.

Per serving:- 297 kcals, 12g fat, 3g saturated fat, 12g carbohydrate, 0.69g sodium
