Kalitsounia With Savoury Mezithra

Ingredients
For the pastry:
1 cup of oil
1 glass of water
The juice of 1 lemon
A little salt
1 kilo of flour (or as much as is needed)
For the filling:
1 ½ kilos of savoury mezithra cheese
3 eggs
Mint
Sesame seeds
1 egg for glazing
Method
Mix the oil with the lemon juice, adding salt. Add the flour little by little until you form a dough which is manageable. Roll out the dough into a sheet of average thickness. Cut it into rounds with the aid of the rim of a glass. Prepare the filling by combining well the mezithra, the eggs, the mint and a little salt.
Fill each round of dough with this mixture with the help of a teaspoon and fold over the pieces of dough into half moon shapes. Pinch the edges of the pastry with the fingers to close well. Coat with the egg and sprinkle the sesame seeds. Bake in a moderate oven for 30 minutes.
