Mincemeat And Apple Flan
Ingredients
120g/4oz/1 cup wholemeal/wholewheat flour
Salt
60g/2oz/ ¼ cup margarine
60g/4 tablespoons dark brown sugar
30-45ml/2-3 tablespoons water
225g/8oz/1 cup sweet mincemeat
5ml/1 teaspoon ground nutmeg
1-2 green dessert apples, sliced
5ml/1 teaspoon ground allspice
15ml/1 tablespoon brandy

Method
Put the flour, salt and margarine into a mixing bowl and rub in the fat until the mixture resembles fine breadcrumbs. Stir in the sugar and gradually add the water, mixing to form a wet dough.
Put the pastry into a 16cm/6½ inch flan dish and press out to form a pie shell. Prick the base of the shell with a fork and cook, uncovered, on HIGH for 3-4 minutes, turning the dish 3 times during cooking.
Mix the mincemeat with the nutmeg, mix in the brandy and spread over the pastry base. Arrange the apple slices on top. Sprinkle the allspice over the apple. Cook, uncovered, on HIGH for 3 minutes until the flan is hot and the apples are just tender.
Preparation time: 20 minutes
Microwave cooking time: 6-7 minutes
