Turkey Marsala
Ingredients
4120 g/4 oz turkey breast fillets
1 small onion, peeled and finely chopped
1 red pepper, seeded and sliced
1 clove garlic, peeled and crushed
15 ml/1 tablespoon oil
225 g/8 oz mushrooms, quartered
140 ml/ ¼ pint/ ½ cup good hot chicken stock
70 ml/4½ tablespoons Marsala
30 ml/2 teaspoons lemon verbena or lemon thyme
15 ml/1 tablespoon salad burnet
15 ml/1 tablespoon comflour/comstarch
Salt
Freshly ground black pepper

Method
Cut the turkey into thin slivers. Put the onion, pepper, garlic and the oil in a casserole and cook on HIGH for 3 minutes, until just beginning to soften. Add the turkey and cook on HIGH for 6 minutes, until almost cooked. Add the mushrooms and stir in the stock, marsala and herbs. Cover and cook on HIGH for 10-15 minutes until the meat is cooked and tender.
Mix the cornflour/cornstarch with 45ml/3 tablespoons water and stir into the casserole. Cook, uncovered, on HIGH for 3-5 minutes until thickened, stirring twice. Season to taste with salt and pepper.
