Chicken And Lemon Parcels

Ingredients

4 x 180-225g/4-6oz chicken breast fillets
15ml/1 tablespoon oil
1 small onion, peeled and finely chopped
120g/4oz mushrooms, finely chopped
10ml/2 teaspoons chopped tarragon
Salt
Freshly ground black pepper
60g/2oz/4 tablespoons unsalted butter
1 egg yolk
15ml/1 tablespoon lemon juice
15ml/1 tablespoon single/light cream

Method

Flatten the chicken breasts between 2 sheets of greaseproof/wax paper using a rolling pin, taking care to keep the chicken in one piece. Set aside.


Put the oil and onion together in a small bowl. Cover and cook on HIGH for 2 minutes to soften. Add the mushrooms and half of the chopped tarragon, cover and cook on HIGH for 1-2 minutes. Season to taste with salt and pepper.


Divide the mixture between each chicken breast and fold up to form parcels. Arrange in a circle in a dish and cook, uncovered, on HIGH for 6-8 minutes. Transfer to a serving dish and keep warm.


Meanwhile, put the butter in a small bowl and cook, uncovered, on HIGH for 1 minute or until melted. Mix the lemon juice, cream and egg yolk together and pour onto the butter; whisk. Cook on HIGH for 30 seconds-1 minute, whisking every 20 seconds until thickened. Pour the sauce over the chicken parcels to serve.
