Liver Casserole
Ingredients
30g/1oz/2 tablespoons butter
2 large onions, peeled and sliced
1 small clove garlic, peeled and crushed
675g/1½ lbs lamb's liver, sliced
30ml/2 tablespoons cornflour/cornstarch
30ml/2 tablespoons Cointreau
280m1/ ½ pint/1 cup hot beef stock
15ml/1 tablespoon chopped lovage
Salt
Pepper
Garnish:
Orange slices

Serves: 4
Method
Put the butter, onion and garlic in a casserole and cook on HIGH for 2 minutes, until soft. Toss the liver in the mixture until well coated. Cover and cook on MEDIUM for 10-15 minutes until just cooked.
Blend the cornflour/cornstarch with the Cointreau and add to the liver along with the beef stock; stir in the lovage. Season to taste. Cover and cook on HIGH for 3-4 minutes until the sauce is hot and thickened.
Preparation time: 15 minutes
Microwave cooking time: 15-20 minutes
