Veal And Garlic Cheese Rolls
Ingredients
4 x 120-180g/4-6oz veal escalopes
2 small cloves garlic, peeled and crushed
225g/8oz low fat, soft cheese
Small bunch chives, chopped
Salt
Freshly ground black pepper
5ml/1 teaspoon paprika (optional)

Method
Flatten the veal escalopes between 2 sheets of greaseproof/wax paper using a rolling pin and taking care to keep in one piece. Set aside.
Combine the garlic, cheese and chives together and season with salt and pepper. Divide the mixture into 4, spread over each of the veal escalopes and roll up like a Swiss roll/jelly roll.
Sprinkle with paprika if desired. Arrange in a circle in a dish and cook, uncovered, on HIGH for 8-10 minutes. Serve immediately.
