Pork And Orange Casserole
Ingredients
15ml/1 tablespoon oil
1 medium onion, peeled and finely sliced
450g/1 lb pork - cut into 1.25cm/ ½ inch cubes
280ml/ ½ pint/1 cup hot chicken stock
140ml/ ¼ pint/ ½ cup unsweetened orange juice
5ml/1 teaspoon oregano - roughly chopped
10ml/2 teaspoons basil - roughly chopped
1 orange, peeled and sliced
30ml/2 tablespoons cornflour/cornstarch
60ml/4 tablespoons water

Method
Put the oil and onion into a large casserole and cook on HIGH for 2 minutes to soften. Add the pork and cook on HIGH for 4-6 minutes, until almost cooked. Add the stock, orange juice, herbs and orange slices and stir.
Mix the cornflour/ cornstarch with the water and add to the casserole. Cover and cook on MEDIUM for 10-15 minutes, until the meat is completely cooked and the liquid is thickened slightly, stirring occasionally. Serve with rice.

Microwave cooking time: 16-23 minutes
