Casseroled Lamb
Ingredients
450g/1lb lamb fillet (loin), cubed
15ml/1 tablespoon oil
1 large onion, peeled and sliced
1 small clove garlic, peeled and crushed
30g/1oz/2 tablespoons flour
225g/8oz courgettes/zucchini, sliced
225g/8oz carrots, peeled and sliced
430ml/ ¾ pint/1½ cups good hot beef stock
280ml/ ½ pint/1 cup brown ale
30ml/2 tablespoons chopped lemon thyme
15ml/1 tablespoon chopped chervil
Salt
Freshly ground black pepper

Method
Heat a large browning dish for the manufacturer's recommended time. Meanwhile, toss the lamb in the oil. When the dish is hot, add the meat and cook on HIGH for 2-3 minutes, stirring once.
Add the onion and the garlic and cook on HIGH for 2 minutes, stir in the flour and add the remaining ingredients. Cover and cook on HIGH for 10 minutes then reduce setting and cook on MEDIUM for 20 minutes, stirring occasionally until the vegetables and meat are tender.
Preparation time: 15 minutes
Microwave cooking time: 35 minutes
