Poached Pears With Raspberry Coulis

Ingredients

140ml/ ¼ pint/ ½ cup water
30ml/2 tablespoons honey
10ml/2 teaspoons lemon juice
Few sprigs of hyssop
4 pears
225g/8oz fresh or frozen raspberries (thawed if frozen)
5ml/1 teaspoon chopped hyssop

Hyssop leaves

Method

Put the water and honey in a large, shallow dish and cook, uncovered, for 1-2 minutes, stirring until the honey is dissolved. Add the lemon juice and hyssop sprigs. Peel the pears thinly and cut in half; carefully remove the core and stalk using a teaspoon. Place the pears in the syrup, cover and cook on HIGH for 5-10 minutes until the pears are tender.


Meanwhile, purée the raspberries in a blender or food processor and then push the purée through a sieve to remove the pips. Sweeten the purée with a little of the cooking syrup if desired. Stir in the chopped hyssop. Carefully drain the pears and transfer to a serving dish. Chill thoroughly. Serve the pears with a little of the raspberry coulis poured over them, serve the remaining coulis separately. Decorate with hyssop leaves if desired.

Microwave cooking time: 6-11 minutes
