Hot Tomato Salad
Ingredients
2 large beef tomatoes (total weight about 560g/1¼ lbs)
45ml/3 tablespoons olive oil
15ml/1 tablespoon cider vinegar
5ml/1 teaspoon chopped chives
5ml/1 teaspoon roughly chopped basil
2.5m/1/½ teaspoon whole grain mustard

Method
Slice the tomatoes and arrange on a micro-proof serving dish or on four individual dishes. Mix the oil, vinegar, chives, basil and mustard in a small jug and pour over the tomatoes.
Cook, uncovered, on HIGH for 2-3 minutes until hot but not cooked. If using individual dishes, arrange these in a circle in the microwave. Serve immediately.

Microwave cooking time: 2-3 minutes
