Coconut Easter Eggs
Ingredients
3 oz cream cheese, softened
½ teaspoon vanilla
1 lb confectioner’s sugar
¼ cup flaked coconut
Pinch of salt
1 lb chocolate, melted
Method
Combine cream cheese and vanilla in bowl. Gradually add confectioner’s sugar, coconut and salt. Mix to consistency that can be easily handled, adding more confectioner's sugar if necessary.
Form candy into eggs; set aside for about an hour.
Dip into chocolate; let set until firm.
