Grape And Bergamot Jellies
Ingredients
120g/4oz/green grapes
430ml/ ¾ pint/1½ cups unsweetened white grape juice
30g/2 tablespoons sugar
15g/1 tablespoon powdered gelatine
140ml/ ¼ pint/ ½ cup water
4 sprigs bergamot
Whipped cream to decorate (optional)

Method
If the grapes are not seedless, cut in half and remove the pips. Skin the grapes if desired.
Put the grape juice in a large bowl with the sugar and bergamot, and cook on HIGH for 2-4 minutes until the sugar is dissolved, stirring once. Allow to cool slightly, then remove the bergamot.
Mix the gelatine with 60ml/4 tablespoons/ ¼ cup of the water, cook on HIGH for 30 seconds, stir and cook for a further 30 seconds if necessary to dissolve the gelatine. Stir into the grape juice and add the remaining water.
Divide the grapes between four glasses and pour in the jelly. Chill until set. Decorate with rosettes of cream if desired.
Preparation time: 10 minutes plus setting time
Microwave cooking time: 3-5 minutes
