Applemint Pudding

Ingredients

225g/8oz cooking apple, peeled, cored and sliced
Small knob of butter
30-60g/2-4 tablespoons granulated sugar
5ml/1 teaspoon chopped spearmint
120g/4oz/ ½ cup margarine
120g/4oz/ ½ cup dark brown sugar
120g/4oz/1 cup plain/all-purpose flour
7.5ml/1½ teaspoons baking powder
2 eggs
10ml/2 teaspoons golden syrup
30ml/2 tablespoons milk
10ml/2 teaspoons chopped applemint
Oil to grease

Method

Lightly grease a 1150ml/2 pint/4 cup pudding basin or bowl.


Place the apples, butter and sugar to taste in a small bowl, cover and cook on HIGH for 3-5 minutes until soft and mushy, stirring occasionally. Stir in the spearmint.


Pour into the bottom of the pudding basin. Put the remaining ingredients except the applemint into a mixing bowl and beat thoroughly until smooth; fold in the applemint. Carefully spoon the mixture on top of the apple.


Cook, uncovered, on HIGH for 6-7 minutes until the mixture is just dry on top and beginning to come away from the sides. Cover and leave to stand for 5 minutes before turning out onto a serving dish. Serve hot or cold with cream or ice cream.

Preparation time: 10 minutes
Microwave cooking time: 9-12 minutes plus 5 minutes standing time
