Red And Black Compote
Preparation time: 5 minutes, plus cooling

Ingredients
225g (8 oz) sugar
300 ml (½ pint) water
450g (1 lb) redcurrants
450g (1 Ib) blackcurrants
1 tablespoon arrowroot
Juice of ½ lemon

Serves: 8
Method
1. Dissolve the sugar and water in a medium pan over a gentle heat.
2. Bring to the boil, then add the fruit and simmer gently for 15 minutes.
3. Strain the fruit, reserving the liquor and spoon the fruit into a serving dish.
4. Return the syrup to the pan and bring it to the boil. Blend the arrowroot with the lemon juice. Remove the saucepan from the heat and stir in the arrowroot.
5. Return the pan to the heat, stirring until the syrup is thick and clear. Pour the syrup over the fruit. Cool before serving.
Cook’s Tip:-
Can be prepared the previous day, covered tightly with cling film and kept chilled.
