Green And Gold Salad

Preparation time: 40 minutes, plus chilling

Ingredients

100 g (4 oz) sugar
150 ml (¼ pint) water
Juice of ½ a lemon
2 tablespoons Chartreuse
1 small Ogen melon
2 passion fruit
225g (8 oz) green seedless grapes, peeled
2 kiwi fruit, peeled and sliced

Method

1. Dissolve the sugar in the water in a heavy saucepan over a medium heat, stirring all the time. Bring to the boil and boil for 2-3 minutes. Remove from the heat.


2. Let the syrup cool, add the lemon juice and Chartreuse and pour into a serving bowl.


3. Cut the melon in half, discard the pips and scoop out melon balls.


4. Cut the passion fruit in half and spoon out the flesh.


5. Mix the grapes, melon balls, slices of kiwi fruit and the passion fruit together carefully in the syrup and chill in the refrigerator.

To make melon balls it is worth buying a food baller to make perfectly round shapes. A melon baller normally has a handle with a cup on one or both ends and comes in different sizes. To make melon balls, cut the melon in half and scrape out all the seeds. Push the baller, cup shape downwards into the flesh. Rotate the cup in the flesh to make a complete ball. Lift out and transfer to a dish. Pieces of leftover melon flesh can be chopped or puréed and used for another dish.

Chef’s Tip: -

Can be prepared the previous day, covered tightly with cling film and kept chilled.
