Italian Salad Of Artichoke Hearts
Ingredients
12 artichokes
5 tbsp olive oil
2 tbsp white wine vinegar
Salt
½ tsp mustard
6 radishes, sliced

Serves: 6
Method
If you are using fresh artichokes, simmer them until tender. Drain and remove the chokes. Cut the artichoke hearts into chunks and arrange in 1 large serving or 6 individual bowls.
Mix together the oil, vinegar and mustard and season with salt to make a vinaigrette dressing.
Pour the vinaigrette over the artichoke hearts and serve them garnished with the radish slices.
