Mixed Vegetable Risotto

Ingredients

15ml/1 tablespoon oil
½ red pepper, seeded and diced
½ green pepper, seeded and diced
570ml/1 pint/2 cups hot vegetable stock
225g/8oz/1 cup brown rice
180g/6oz button mushrooms, quartered
10ml/2 tsps chopped pennyroyal
10ml/2 tsps chopped hyssop
Salt
Freshly ground black pepper
120g/4oz prawns/shrimp

Method

Put the oil in a casserole and add the diced peppers. Cover and cook on HIGH for 3-4 minutes until the peppers are beginning to soften. Add the stock, rice, mushrooms, herbs and seasoning. Stir, cover and cook on HIGH for 25-30 minutes, or until most of the liquid has been absorbed. Stir in the prawns/shrimp and leave to stand for 5 minutes before serving. 

Preparation time: 15 minutes
Microwave cooking time: 25-30 minutes plus 5 minutes standing time
