Nut And Herb Bulgur
Ingredients
1 small red pepper, seeded and sliced
1 small onion, peeled and chopped
60g/2oz/ ½ cup hazelnuts, roughly chopped
30g/1oz/ ¼ cup pinenuts
15ml/1 tablespoon oil
120g/4oz cucumber, diced
15ml/1 tablespoon chopped coriander
15ml/1 tablespoon chopped mint
30ml/2 tablespoons chopped parsley
430ml/ ¾ pint/1½ cups hot chicken or vegetable stock
225g/8oz/1¼ cups bulgur wheat

Method
Put the pepper, onions, nuts and oil into a large bowl, cover and cook on HIGH for 3 minutes. Stir in the remaining ingredients. Cover and cook on HIGH for 10 minutes or until all the moisture has been absorbed.
Leave to stand for 5 minutes and fluff up with a fork before serving. Serve hot or cold as an alternative to rice.
Preparation time: 10 minutes
Microwave cooking time: 13 minutes plus 5 minutes standing time
