Leek And Potato With Lemon Thyme
Ingredients
225g/8oz leeks, trimmed, sliced and washed
225g/8oz potatoes, peeled and sliced
Salt
Freshly ground black pepper
30ml/2 tablespoons chopped lemon thyme
140ml/ ¼ pint/ ½ cup hot vegetable stock

Serves: 4
Method
Arrange the leeks and potatoes in layers in a micro-proof dish, sprinkling each layer with salt, pepper and lemon thyme. Pour over the stock. Cover loosely and cook on HIGH for 8-10 minutes until cooked.
