Duck Breasts With Spicy Apple

Ingredients

4 x 225g/8oz duck breast fillets
8 juniper berries, crushed
5ml/1 teaspoon ground cumin
2.5ml/ ½ teaspoon ground cardamom
30g/1oz/2 tablespoons butter
1-2 green eating apples

Method

Cut a slit horizontally in each of the duck breasts and set aside.


Place the juniper berries, cumin, cardamom and butter in a small dish and cook, uncovered, on HIGH for 1-2 minutes, stirring once.


Core the apples and cut into 5mm/ ¼ inch thick slices. Toss in the butter mixture and cook on HIGH for 1-2 minutes until the apples are just beginning to soften, but still hold their shape. Divide the apple slices between the duck and place into each slit.


Arrange the duck breasts in a circle in a shallow dish. Cover and cook on HIGH for 10-15 minutes until the duck is cooked, turning and repositioning halfway through the cooking time if necessary. Serve with green vegetables or salad.

Microwave cooking time: 12-17 minutes
