Cod And Prawn/Shrimp Bake

Ingredients

450g/1lb cod
2 bay leaves
6 pink peppercorns
1 small piece fresh ginger, peeled and grated
2.5ml/ ½ teaspoon ground mace
70ml/4½ tablespoons white wine
70ml/4½ tablespoons fish stock or water
30g/1oz/2 tablespoons butter
30g/1oz/2 tablespoons flour
140ml/ ¼ pint/ ½ cup milk
180g/6oz prawns/shrimp
30g/1oz/ ½ cup salt and vinegar flavoured crisps/potato chips, crushed

Method

Cut the cod into 2.5cm/1 inch pieces and place in a shallow dish. Add the bay leaves, peppercorns, ginger, mace, wine and stock/water. Cover and cook on HIGH for 4 minutes until the fish is almost cooked. Cover and set aside.


Put the butter in a small bowl and cook on HIGH for 30 seconds to melt. Add the flour and cook on HIGH for 30 seconds. Add the fish cooking liquor and the milk, and cook on HIGH for 2-4 minutes, whisking every minute until thickened.


Add the prawns/shrimp, pour the sauce over the cod and cook on HIGH for 2-4 minutes until the sauce is hot and the fish is fully cooked. Sprinkle with the crushed crisps/chips.

Preparation time: 10 minutes
Microwave cooking time: 9-13 minutes
