Red Mullet En Papillote
Ingredients
2 carrots, peeled and cut into matchsticks
Salt
45ml/3 tablespoons water
60g/2oz/ ¼ cup water chestnuts, cut into sticks
60g/2oz/1 cup bean sprouts
Small piece lemon grass, peeled and chopped or 5ml/1 teaspoon grated lemon zest
10ml/2 teaspoons aniseed
5ml/1 teaspoon dill seeds
60ml/4 tablespoons white wine
4 red mullet, cleaned
15g/1 tablespoon butter
Ground white pepper

Method
Put the carrots, salt and water in a bowl and cook on HIGH for 2 minutes. Add the water chestnuts and cook on HIGH for 1 minute. Stir in the bean sprouts, lemon grass or lemon zest, aniseed, dill seeds and wine.
Place each fish on a piece of non-stick baking parchment or wax paper. Divide the vegetables between the four fish and pour over the liquid. Season with pepper, dot with the butter and wrap each parcel separately, ensuring that each fish is totally enclosed.
Place in the microwave and cook on HIGH for 6-8 minutes until the fish is cooked, repositioning halfway through cooking time. Serve the fish in their parcels.
