Curried Fish
Ingredients
450g/1lb monkfish
15ml/1 tablespoon oil
15ml/1 tablespoon curry powder
10ml/2 teaspoons garam masala
2.5ml/ ½ teaspoon ground ginger
6 spring/green onions, sliced
1-2 small turnips, peeled and diced
4 tomatoes, skinned and chopped
225g/8oz sweet potato, peeled and cubed
140ml/ ¼ pint/ ½ cup natural yogurt
60g/2oz/ ½ cup cashew nuts

Method
Cut the fish into 2.5cm/1 inch cubes and set aside. Put the oil and the spices in a casserole and cook on HIGH for 1 minute. Stir in the onions, turnip, tomatoes and sweet potatoes. Cover and cook on HIGH for 5-7 minutes until just tender. Add the fish and continue cooking on HIGH for 5-6 minutes until the fish and vegetables are cooked.
Stir in the yogurt and cashews, cook on HIGH for 1-2 minutes until heated through, stirring once.
Preparation time: 15 minutes
Microwave cooking time: 11-15 minutes
