Carrots With Cumin
Ingredients
450g/1lb carrots, peeled
70ml/4½ tablespoons hot vegetable stock or water
10ml/2 teaspoons cumin
Salt
Freshly ground black pepper
15g/ ½ oz/1 tablespoon butter
10ml/2 teaspoons chopped parsley

Serves: 4
Method
Cut the carrots into thin strips about 5-7cm/2-3 inches long, place them in a casserole with the vegetable stock, cumin, salt and pepper. Cover and cook on HIGH for 10-12 minutes, stirring once. Stir in the butter and toss well. Serve sprinkled with parsley.

Microwave cooking time: 10-12 minutes
