Green Beans With Mustard Sauce

Ingredients

450g/1 lb green beans
140ml/ ¼ pint/ ½ cup hot vegetable stock or water
Salt
Approx. 140ml/ ¼ pint/ ½ cup milk
30g/1oz/2 tablespoons butter
30g/1oz/2 tablespoons flour
15ml/1 tablespoon dry mustard
Ground white pepper

Method

Trim the green beans and cut into 5cm/2 inch lengths. Put the beans in a casserole with the vegetable stock or water and salt. Cover and cook on HIGH for 6-8 minutes until just tender, stirring once. Drain, reserving the cooking liquor. Set the beans aside and keep warm.


Make the liquor up to 280ml/ ½ pint/1 cup with the milk. Put the butter into a bowl and cook on HIGH for 30 seconds or until melted. Add the flour, mustard powder and pepper and mix well. Cook on HIGH for 45 seconds. Add the milk and cooking liquor and mix well. Cook, uncovered, on HIGH for 1 minute. Cook a further 1-2 minutes until thickened slightly, whisking every 30 seconds. Serve the sauce poured over the beans.

Microwave cooking time: 9-12 minutes
