Spaghetti Alla Bolognese
Ingredients
225g/8oz spaghetti
1 clove garlic, peeled and crushed
1 large onion, peeled and finely chopped
1 stick celery, finely chopped
2.5ml/ ½ teaspoon ground allspice
1.25ml/ ¼ teaspoon ground cardamom
225g/8oz minced/ground beef
1 x 400g/14oz can tomatoes
Worcestershire sauce
70ml/4½ tablespoons beef stock
Freshly ground black pepper
Salt
15ml/1 tablespoon cornflour/cornstarch
45ml/3 tablespoons sherry
1150ml/2 pints/4 cups boiling, salted water
15ml/1 tablespoon oil
Grated Parmesan cheese to serve

Method
Put the oil, garlic, onion, celery and spices in a large bowl. Cover and cook on HIGH for 3-4 minutes until soft. Add the meat and cook on HIGH for 5-6 minutes until it has changed colour, breaking up with a fork once or twice during cooking. Add the tomatoes, Worcestershire sauce and stock, season to taste with the salt and pepper. Cover and cook on LOW for 20 minutes until the meat is tender and the flavours well blended.
Mix the cornflour/ cornstarch and sherry together and stir into the sauce. Cook on HIGH for 2-3 minutes until thickened slightly, stirring once. Cover, set aside and keep warm. Put the spaghetti and water in a large bowl, cover and cook on HIGH for 8-10 minutes. Drain and mix with the sauce. Reheat for 1-2 minutes if necessary. Sprinkle with Parmesan cheese to serve.
