Spicy Egg Fried Rice
Ingredients
15ml/1 tablespoon oil
1 small green chilli, seeded and finely chopped (optional)
Small piece root ginger, peeled and grated
340g/12oz/4½ cups cooked rice
30ml/2 tablespoons light soy sauce
2 eggs
2.5ml/ ½ teaspoon five spice powder

Method
Put the oil, chilli and ginger in a medium bowl and cook on HIGH for 1-2 minutes until soft.
Add the rice and cook, uncovered, on HIGH for 2-4 minutes until the rice is hot.
In a small dish, beat the soy sauce with the eggs and five spice powder, then add to the rice. Cook, uncovered, on HIGH for 2-3 minutes, stirring regularly until the egg is cooked.
Preparation time: 5 minutes
Microwave cooking time: 5-9 minutes
