Chicken, Mushroom And Coriander Pizza

Shiitake mushrooms add an earthy flavour to this colourful pizza, while fresh chilli and chilli flavoured olive oil give it a hint of spiciness. Cook the pizza on the barbecue or in the oven.

Ingredients

45ml/3 tbsp olive oil
350g/12oz skinned chicken breast fillets, cut into thin strips
1 bunch spring onions, sliced
1 fresh red chilli, seeded and chopped
1 red pepper, cut into thin strips
75g/3oz fresh shiitake mushrooms, sliced
45-60ml/3-4 tbsp chopped fresh coriander
1 pizza base, about 25-30cm/10-12in diameter
15ml/1 tbsp chilli oil
150g/5oz mozzarella cheese
Salt and freshly ground black pepper

Method

1. Heat 30ml/2 tbsp olive oil in a wok or large frying pan. Add the chicken, spring onions, chilli, red pepper and mushrooms and stir-fry over a high heat for 2-3 minutes until the chicken is firm but still slightly pink inside. Season to taste.


2. Pour off any excess oil, then set aside to let the chicken mixture cool.


3. Stir the fresh coriander into the cooled chicken mixture in the wok.


4. Brush all over the pizza base with the chilli oil.


5. Spoon over the chicken mixture and drizzle over the remaining olive oil.


6. Grate the mozzarella cheese and sprinkle it over the pizza base. Cook the pizza on a medium-hot barbecue for 15-20 minutes, until the base is crisp and golden and the cheese is bubbling. Serve the pizza immediately.
