Lamb With Mint And Lemon
Use this simple and traditional marinade to make the most of fine quality lamb leg steaks. Lemon and fresh mint combine extremely well with the flavour of barbecued lamb.
Ingredients
4 lamb steaks, about 225g/8oz each
Fresh mint leaves, to garnish
FOR THE MARINADE
Grated rind and juice of ½ lemon
1 garlic clove, crushed
1 spring onion, finely chopped
5ml/1 tsp finely chopped fresh mint
30ml/2 tbsp extra virgin olive oil
Salt and freshly ground black pepper

Method
1. Mix all the marinade ingredients and season to taste. Place the lamb steaks in a shallow dish and add the marinade. Cover with clear film and leave to marinate in the fridge for several hours or overnight.
2. Drain the lamb and cook on a medium-hot barbecue for about 10-15 minutes until just cooked, basting with the marinade occasionally and turning once. Garnish the lamb steaks with the fresh mint leaves.
