Shrimp In Flaky Pastry
Ingredients
3 tablespoons butter
1 (14-ounce) can artichoke hearts, drained and quartered
8 ounces mushrooms, sliced
1 tablespoon chopped fresh parsley
½ teaspoon salt
1 sheet frozen puff pastry, thawed
2 (6-ounce) packages sliced Swiss cheese
1 pound peeled cooked shrimp
1 egg, beaten

Method
Melt the butter in a large skillet. Sauté the artichoke hearts, mushrooms and parsley in the melted butter for 3 minutes or until the mushrooms are tender; drain. Sprinkle with the salt. Roll the pastry into a 10x15-inch rectangle on a lightly floured work surface. Place on a lightly greased baking sheet. Arrange the cheese on ½ of the dough, leaving a 1 -inch border. Spoon the vegetable mixture over the cheese layer. Top with the shrimp. Brush the edges of the pastry with some of the egg. Wrap the dough over the filling, pressing the edges with a fork to seal. Brush with the some of the egg. Bake at 375 degrees for 15 minutes or until golden brown. Slice and serve hot.
