Apricot Jam Sauce
Ingredients
2 rounded tablespoons of home made apricot jam
About 7½ fl oz water
2 strips of lemon rind
1 tablespoon sugar
1 tablespoon arrowroot (slaked with 1 tablespoon water ) - optional
Method
Put all the ingredients, except the arrowroot, into a pan and bring slowly to the boil, stirring well. Taste, and if not strong enough in flavour add a little more jam. Continue to simmer for 5-6 minutes, then remove the lemon rind and thicken if necessary with the arrowroot. Serve hot.
