Chocolate Sauce
Ingredients
2 oz plain block chocolate
2 tablespoons sugar
1 teaspoon cocoa
1 teaspoon instant coffee
½ pint water
1 egg yolk (optional)
½ teaspoon vanilla essence
Method
Break up the chocolate and put into a saucepan with the sugar, cocoa, coffee and water. Heat slowly, stirring frequently until. dissolved. Then simmer with the lid off the pan until it is the consistency of thin cream.
Draw pan aside, and if using the yolk, blend with 1-2 tablespoons of the hot sauce before adding it to the pan, and then add the vanilla essence. If no yolk is used, continue to simmer the sauce until it is a little thicker before adding vanilla.
