Rich Shortcrust Pastry
Ingredients
8 oz plain flour
Pinch of salt
6 oz butter
1 rounded dessertspoon caster sugar (for sweet pastry)
1 egg yolk
2-3 tablespoons cold water
Method
Sift the flour with a pinch of salt into a mixing bowl. Drop in the butter and cut it into the flour until the small pieces are well coated. Then rub them in with the fingertips until the mixture looks like fine breadcrumbs. Stir in the sugar, mix egg yolk with water, tip into the fat and flour and mix quickly with a palette knife to a firm dough.
Turn on to a floured board and knead lightly till smooth. If possible, chill in refrigerator (wrapped in greaseproof paper, a polythene bag or foil) for 30 minutes before using.
