Fresh Fruit Jelly
Ingredients
2 clementines
1 ripe dessert pear
6 oz black or white grapes
½ lb lump sugar
1 pint water
Finely pared rind and juice of 1 lemon
1½ oz gelatine (soaked in 43 fl oz water)
1 can (6¼ fl oz) concentrated frozen orange juice made up with 14 fl oz water
Method
Put the sugar and water in a pan with the lemon rind and juice. Dissolve over gentle heat, then simmer for 5 minutes. Strain this syrup through muslin, wringing it out very well to remove all the syrup and essence from the lemon rind. Add the soaked gelatine to the hot syrup and stir until completely dissolved.
Watchpoint: It is important to have the gelatine soaking in the cold water before the sugar syrup is prepared. It should be added to the hot syrup as soon as this has been strained.
Add the diluted orange juice to the sugar syrup and gelatine mixture and allow to cool.
Peel and slice the clementines; peel, core and slice the ripe pears; skin and pip the grapes. Arrange the fruit in a glass bowl and pour on cool jelly. Cover and allow to set.
Serve a bowl of whipped cream with the jelly.
