Strawberries In Raspberry Cream
Ingredients
1 lb strawberries
Caster sugar (for dusting)
Juice of ½ orange
1-2 tablespoons kirsch
½ lb raspberries
4 tablespoons icing sugar
½ pint double cream
Method
Hull the strawberries, place them in a bowl, dust with the caster sugar and sprinkle with the orange juice and kirsch; cover bowl and leave in a cool place while preparing cream.
To prepare raspberry cream: rub raspberries through a nylon sieve and work the icing sugar into this purée, a little at a time. Lightly whip the cream, carefully fold in the sweetened raspberry cream and spoon this over the strawberries.
