Brazilian Bananas
Ingredients
8 bananas
2 tablespoons rum
2 dessertspoons instant coffee
2 dessertspoons caster sugar
8 fl oz double cream
Few almonds (browned, flaked)
Method
Peel the bananas, slice thickly into a serving dish or coupe glasses and sprinkle over the rum. Dissolve the coffee in 3-4 tablespoons boiling water, add caster sugar, leave until cold.
Whip the cream and add the cold coffee mixture. Cover the bananas with the coffee flavoured cream, scatter a few browned flaked almonds on top and serve chilled.
