Orange Water Ice
Ingredients
4 large oranges
Pared rind and juice of 2 lemons
8 oz lump sugar
1½ pints water
½ egg white (whisked)
Method
Put the rind of the lemon into a pan with 6 oz sugar and the water and dissolve over heat. Draw pan aside, then rub the remaining lumps of sugar on to the rind of the oranges to remove the zest. Do this thoroughly. Return the pan to the heat and boil mixture for a further 5 minutes, then draw pan aside, add the lumps of sugar, allow them to dissolve and return pan to heat for about 30 seconds. Remove pan from heat, add the strained juice of the lemons and oranges to the mixture and chill.
Pour mixture into a churn freezer and churn as directed in the general instructions. Add ¾-1 tablespoon of the egg white, whisked to a firm snow, when the ice is frozen to a slush. Continue to churn until firm then pack down. The ice is now ready to serve.
