Curried Lamb Samosas

Ingredients

25g/1oz/2 tbsp butter
225g/8oz/1 cup minced (ground) lamb 30ml/2 tbsp mild curry paste
12 filo pastry sheets
Salt and ground black pepper

Method

1. Heat a little butter in a large pan and add the lamb. Fry for 5-6 minutes, stirring occasionally until browned. Stir in the curry paste and cook for 1-2 minutes. Season and set aside. Preheat the oven to 190°/375°C/Gas 5.


2. Melt the remaining butter in a small pan. Cut the pastry sheets in half lengthways. Brush one strip of pastry lightly with butter, then lay another strip on top and brush lightly and evenly with more butter.


3. Place a spoonful of lamb in the corner of the strip and fold over to form a triangle at one end. Keep folding over in the same way to form a triangular package. Brush with butter and place on a baking sheet. Repeat using the remaining pastry. Bake for 15-20 minutes until golden. Serve hot.
