Potato Skins With Cajun Dip

Ingredients

2 large baking potatoes
Vegetable oil, for deep frying

For the dip

120ml/4fl oz/½ cup natural (plain) yogurt
1 garlic clove, crushed
5ml/1 tsp tomato purée (paste)
2.5ml/½ tsp green chilli purée or ½ small green chilli, chopped
1.5ml/¼ tsp celery salt
Salt and ground black pepper

Method

1. Preheat the oven to 180°C/350°F/Gas 4. Bake the potatoes for 45-50 minutes until tender. Cut them in half and scoop out the flesh, leaving a thin layer on the skins.


2. To make the dip, mix together all the ingredients and chill.


3. Heat a 1cm/½in layer of oil in a large pan or deep-fat fryer. Cut each potato half in half again, then fry them until crisp and golden on both sides. Drain on kitchen paper, sprinkle with salt and black pepper and serve with a bowl of dip or a dollop of dip in each skin.

COOK'S TIP:- If you prefer, you can microwave the potatoes to save time. This will take about 10 minutes.
