Smoked Mackerel With Blueberries
Fresh blueberries burst with flavour when cooked, and their sharpness complements the rich flesh of mackerel very well.
Ingredients
15g/½oz plain flour
4 hot-smoked mackerel fillets
50g/2oz/4 tbsp unsalted butter
Juice of ½ lemon
Salt and freshly ground black pepper
FOR THE BLUEBERRY SAUCE
450g/1lb blueberries
25g/1oz/2 tbsp caster sugar
15g/½oz/1 tbsp unsalted butter
Salt and freshly ground black pepper

Method
1. Season the flour with salt and freshly ground black pepper. Coat each fish fillet in the flour, covering it well.
2. Brush the fillets with butter and cook on a medium barbecue for a few minutes until heated through with a crisp coating.
3. To make the sauce, place the blueberries, sugar, butter and salt and pepper in a small roasting pan and cook on the barbecue, stirring occasionally, for about 10 minutes. Serve immediately, drizzling the lemon juice over the mackerel and with the blueberries on the side.
