Herbal Punch

This refreshing party drink will have people coming back for more, and it is an original non-alcoholic choice for drivers and children.

Ingredients

Serves 30 plus

450ml/ pint/2 cups honey
4 litres/7 pints water
450ml/ pint/2 cups freshly squeezed lemon juice
45ml/3 tbsp fresh rosemary leaves, plus extra to decorate
1.5kg/3 lb/8 cups sliced strawberries
450ml/ pint/2 cups freshly squeezed lime juice
1.75 litres/3 pints/7 cups
Sparkling mineral water
Ice cubes
3-4 scented geranium leaves


Method

1. Combine the honey, 1 litre/1¾ pints/4 cups water, one-eighth of the lemon juice and the fresh rosemary leaves in a saucepan. Bring to the boil, stirring, until the honey is dissolved. Remove from the heat and allow to stand for about 5 minutes. Strain into a large punch bowl and leave aside to cool.


2. Press the strawberries through a fine sieve into the punch bowl, add the rest of the water and lemon juice, and the lime juice and sparkling mineral water. Stir gently to combine the ingredients. Add the ice cubes just 5 minutes before serving, and float the geranium and rosemary leaves on the surface.
