Raspberries In Strawberry Cream
Ingredients
8-12 oz raspberries
¼ pint double cream
¼ pint sweetened strawberry purée
Crystallised violets (for decoration)
Method
Arrange the raspberries in coupe glasses. Whip the cream lightly until it just begins to thicken, then add the strawberry purée, a little at a time, and continue whipping until the cream holds its shape. Spoon this over the raspberries and decorate with crystallised violets.
To make a strawberry purée rub the hulled strawberries through a nylon sieve, or blend them in a liquidiser. Add icing, or caster, sugar to taste.
