Strawberry Walnut Cream Cake
Ingredients
3 eggs
Scant 4 oz sugar
3 oz plain flour
2 oz walnuts (coarsely chopped)
2 tablespoons coffee essence
For filling
8-10 fl oz double cream (lightly whipped)
1 lb strawberries
Deep 8-inch diameter cake tin
Method
Prepare the tin by greasing and dusting out with caster sugar and flour. Set the oven at 350°F or gas mark 4.
To prepare the cake mixture: whisk the eggs and sugar over heat as for a whisked sponge, or combine using an electric mixer (without heat). When really thick and mousse-like, take off the heat and continue to whisk for a further minute. Sift the flour and fold it in with the walnuts and coffee essence. Turn the cake mixture into the tin and bake in pre-set oven for 40-45 minutes.
Turn cake out to cool and when cold split into three and layer with two-thirds of the lightly whipped cream mixed with the sliced strawberries. (Reserve a few strawberries for decoration.) The filling should be really lavish. Spread the rest of the cream over the top of the cake and decorate with the reserved strawberries.
