Gâteau Allemande With Raspberries

Ingredients

4 eggs (separated)
7 oz caster sugar
3˝ oz ground almonds
Grated rind and juice of ˝ lemon
3˝ oz fine semolina
8 oz lemon-flavoured glacé icing

To serve

1-1˝ lb raspberries
Caster sugar (to taste)

Deep 9-inch diameter cake tin


Method

Set the oven at 375ºF or gas mark 5 and prepare cake tin: grease it, put a disc of paper at bottom, sugar and flour it. Beat the egg yolks and sugar together until thick and white. Work in the ground almonds and the grated rind and juice of the lemon and leave the mixture to stand for 3 minutes.


Whisk the egg whites until stiff, fold them into the mixture with the semolina, then turn it into the prepared tin and bake in the pre-set oven for about 50 minutes. When the cake is cool, coat it with the icing. Sprinkle the raspberries with sugar and serve separately.
