Beef Patties With Herbs And Red Pepper
Ingredients
1 slice whole-grain bread
2 tbsp (30 ml) low-fat milk
3½ oz (100 g) lean ground beef
1 onion
1 red pepper
½ bunch parsley
5 sprigs fresh thyme or ½ tsp (2 ml) dried
1 small carrot
1 to 2 tbsp (15 to 30 ml) low-fat quark or puréed cottage cheese
1 tbsp (15 ml) flour
Salt and freshly ground pepper
1 tsp (5 ml) canola or vegetable oil

Method
Remove the crust, dice the bread finely and soak in the milk.
Finely chop the onion, red pepper, parsley and thyme. Finely grate the carrot. Combine ground beef, onion, pepper, carrot, quark, soaked bread, parsley and thyme, adding flour as needed to bind. Season with salt and pepper.
Form 4 patties. Heat the oil in a nonstick skillet (frying pan) and cook the patties for 5 to 6 minutes on each side on medium heat, until brown.
Per serving:- approx. 217 calories 16 g protein, 10 g fat, 15 g carbohydrates
